The fruit is ripe in July, and is an oval, yellowish, fleshy berry, containing twelve or more seeds, each surrounded by a pulpy outer coat or aril.
Ripens into a berry-like, very rarely capsular, fruit with the three groups of seeds arranged in lines along the walls, but imbedded in a pulpy arillus derived from the stalk of the seed.
Nephelium Longana, the longan tree, also a native of southern China, is cultivated in that country, in the Malay Peninsula, India and Ceylon for its fruit, which is smaller than that of the litchi, being half an inch to an inch in diameter with a nearly smooth yellowishbrown brittle skin, and containing a pulpy aril resembling that of the litchi in flavour.
Lappaceum, a tall tree native of the Malay Peninsula, where it is known under the names Rambutan or Rambosteen, is also cultivated for its pleasantly acid pulpy aril.
The seeds and nuts are then decorticated (where required), the shells removed, and the kernels ("meats") converted into a pulpy mass or meal (in older establishments by crushing and grinding between stones in edge-runners) on passing through a hopper over rollers consisting of five chilled iron or steel cylinders mounted vertically like the bowls of a calendar.
